What kind of white chocolate chips should I use?

I love making these granola bars with these mini white chocolate chips! I don’t know why, but they just make them that much better. But you can really use any type of white chocolate chips. I also like buying these mini white chocolate chips in bulk because we go through a lot, and it is cheaper!

Can I use a different sweetener than honey?

The only other sweetener I have tried for this recipe is maple syrup. I didn’t have enough honey so I used 1/2 cup raw honey + 1/2 cup maple syrup. They turned out great this way, but I have not tested this recipe with any other sweeteners because I wanted to keep in refined sugar free! Ingredients 

3/4 cup butter, softened

1 cup raw honey

1 tsp vanilla extract

4 1/2 cup rolled oats

1 cup flour

1/4 cup chia seeds

1 teaspoon baking soda

1/2 teaspoon sea salt

3/4 cup mini white chocolate chips

1/2 cup dried cranberries

Instructions

1. Preheat oven to 325, then line a 13″ x 9″ pan with parchment paper, or grease lightly with olive oil or butter

2. Cream softened butter, honey, and vanilla together in a large bowl

3. Add in the oats, flour, chia seeds, and baking soda. Then mix well

4. Stir in the mini white chocolate chips and dried cranberries

5. Pour the oat mixture into the prepared pan, and press down on the mixture to make it even throughout the pan

6. Bake for 18-20 minutes, the edges should just start to brown

7. Let cool for about 10 minutes, then cut into bars while still in the pan. Let cool completely

8. Remove from the pan and enjoy!

Notes

1. This recipe can be frozen for up to 3+ months (they never last longer than that for us)

2. You can store on the counter in an airtight container, or in the fridge, whichever you prefer is great.
