Homemade Hamburger Buns Recipe

Seriously though, when I was first learning how to make bread, homemade hamburger buns were at the top of my list to learn how to make. And let me tell you, there are SO many bad recipes out there, my goodness. The buns would be so bulky and dense, so I decided to research how to make a less dense hamburger bun that was light and more soft like the store-bought buns I was used to. And that’s why I stumbled upon this recipe. I will say this is not my recipe though. I can’t remember where I found this recipe either. I just wrote down the ingredients at some point. I wish I could give the credit where it is due, but also didn’t want to take the credit for this perfect hamburger bun recipe! But it is one of my favorite bread recipes, and it is just too good to not pass along. Truly the best buns I’ve made from home.
How long do these buns last?
Typically about 3 days before they start getting stale. To keep them fresher longer, you can keep them in the fridge for around a week. To freshen them up you can through them in the oven or toaster for a little and you will have toasted buns.
Can I put my homemade hamburger buns in the freezer?
Yes you can! For the best results you can store in the freezer in a freezer safe container for up to 3 months. I typically make batches of these buns in bulk and freeze multiple batches at a time. It helps me save time, and gives me burger buns when I might not have time to make them fresh.
How many hamburger buns does this recipe make?
It makes 6 standard size burger buns, but you can make them bigger or smaller giving you more or less buns. If you want slider buns, divide the dough into 12 dough balls instead of 6.

Ingredients
2 1/4 cups all-purpose flour
1 Tablespoon granulated sugar
1 teaspoon salt
2 teaspoons instant yeast
3 Tablespoons butter, room temperature
3/4 cup lukewarm water
1 to 2 tablespoons melted butter (optional – for brushing on buns after baking)
sesame seeds, optional
Instructions
1. In a large bowl or the bowl of your mixer, add your all-purpose flour, sugar, salt, and instant yeast and stir till combined, with no clumps.
2. Add in the room temp butter and lukewarm water to the dry ingredients.
3. If using a stand mixer, using your dough hook attachment, knead for 8 minutes on medium speed till the dough is smooth and a little bit sticky. **If you are kneading by hand, you will knead for about 15 minutes**
3. Place your dough in a lightly oiled bowl and cover with a tea towel.
4. Let dough rise in a warm place for 1 to 1 1/2 hours. Let the dough rise till it is doubled in size. (This is called the first rise)
5. Turn dough onto a lightly oiled counter, using a bench scraper, divide dough into 6 even pieces. You can use a kitchen scale to weigh each portion if you would like to have buns that are perfectly even in size.
6. Roll each of your six pieces of dough on the counter until you have 6 dough balls. **I do this by rolling the dough in a upside-down “J” shape towards myself, until the form into a smooth ball.**
7. Add each dough ball to a parchment-lined baking sheet.
8. Press down the top of each ball with a lightly oiled hand. You can leave them how they are if you want taller buns. Or if you want a more flat style bun, just press down to make them as flat as you’d like.
9. Cover your buns with your tea towel, and let them rise for another 1 to 1 1/2 hours, or until doubled in size. (This is called the second rise)
10. Whenever your bread is close to being doubled, preheat your oven to 375 F (190 C). **If using sesame seeds, you will add them before this step. See notes for more details**
11. Bake your buns for 15 to 20 minutes, until a nice golden color.
12. Take your buns out of the oven and brush them with the melted butter.
13. Let your homemade buns cool on a wire rack before serving. And Enjoy!
Notes:
1. If using sesame seeds **You can make an egg wash with one egg + a Tablespoon of water, mix that together, and brush the tops of the buns. Then sprinkle your sesame seeds on top**
2. You can easily make this recipe into hot dog buns by simple shaping them into the shape of hot dogs during step number 6. The rest of the process is the same.
3. I use olive oil to oil my bowl
4. If you read this in time, remember to sit your butter out ahead of time. If not, especially if kneading by hand, the butter doesn’t have to be completely room temp. If you’re kneading by hand, the warmth of your hand will help melt the butter as you’re kneading the dough.
5. If buns are too sticky, and not becoming smooth, you may need some additional flour, just add a little at a time until your dough comes to the right consistency,
