Honey Lavender Simple Syrup
This honey lavender simple syrup is such a quick and easy recipe, all you need is equal parts water and raw honey with some dried lavender! This honey lavender syrup recipe is so sweet with a lovely floral flavor. Makes for the perfect honey lavender lattes or honey lavender lemonade, you can even add use it to sweeten your tea!
What is a simple syrup?
Well, to put it simply, simple syrup is basically water and sugar (using a 1:1 ratio), heated up together until dissolved. Simple syrups are commonly used in cold drinks, such as, iced coffee or teas, mocktails, or lemonade. The reason it’s primarily used in cold drinks is because if you were to try to sweeten a cold drink with just plain sugar, it would not dissolve, and you would just end up with sugar granules at the bottom of your beverage, and nobody wants that. So using the simple syrup is an easy way to sweeten a drink!

How to store honey lavender syrup:
- Refrigerator: Once the syrup has been strained, transfer syrup to an airtight container or jar. Syrup can be stored in the refrigerator for up to two weeks. Shake well, before using.
Ways to enjoy this honey lavender simple syrup
Honey Lavender Lemonade: Combine 3 tablespoons of lemon juice with 3 tablespoons of honey lavender syrup. Stir in 3/4 cup water, then add ice before serving.
Honey Lavender Latte: Add 2 tablespoons of honey lavender syrup to 2 shots of espresso and add in 6 to 8 ounces of cold or steamed milk, depending on if you want an iced or hot latte.
Honey Lavender Tea: Add this honey lavender simple syrup to your hot or iced tea, to taste!
Ingredients
- 4 Tablespoons organic dried lavender buds
- 1 cup water
- 1 cup raw local honey
Instructions
- Heat water in a small saucepan until hot, but not boiling.
- Add honey and dried lavender buds
- Stir until honey is completely dissolved.
- Remove from heat, and let steep for one hour. Stir every once in a while to help the lavender steep
- Next, pour the simple syrup through a fine mesh strainer or fine mesh sieve into a cup or bowl
- Press down on the lavender in the fine mesh sieve to squeeze more flavor into the syrup. Discard the lavender buds.
- Transfer to an airtight container and store in the refrigerator for up to two weeks.
Tips
- If you don’t have loose dried lavender buds, you can use lavender tea bags instead
- You can use sugar, or maple syrup in place of the honey, but the honey with the lavender is what makes this recipe great!
- You don’t have to use local raw honey, but I do always suggest it. Any kind of honey will do, we really just want the taste and sweetness of honey, so your favorite honey will do!
